Instructions

To make the Angel Bites:

  1. Preheat oven to 180°C. Lightly grease a baking sheet.
  2. In a mixing bowl using an electric mixer or whisk, whip egg whites on high speed until frothy.
  3. Add Splenda Sweetener, vanilla extract, and salt. Beat on high speed until medium-stiff peaks form.
  4. Spoon rounded tablespoons of mixture onto prepared baking sheet. Bake for 10–15 minutes or until firm and golden brown. Cool slightly, then transfer to a wire rack to cool completely.

To make the filling:

  1. In a saucepan, blend together Splenda Sweetener and egg yolk. Add orange and lemon juice; mix thoroughly. Stir in cornstarch.
  2. Cook over medium heat, stirring frequently, until thickened, about 2 minutes. Chill until ready to use.

To assemble the Angel Bites:

  1. Just before serving, place half of Angel Bites on a platter with the bottoms facing up. Top each with a spoonful of citrus filling. Stack another Angel Bite on top.
  2. Garnish with a dollop of whipped cream, a sprinkle of orange zest, and a mint leaf.
