Instructions

  1. Preheat oven to 160°C. Lightly spray 2 baking sheets with vegetable cooking spray.
  2. In a small bowl, combine applesauce and apple juice. In another bowl, combine flour, oats, baking soda, cinnamon, and nutmeg.
  3. In the bowl of a stand mixer (or in a large bowl using an electric mixer), beat butter, Splenda Sweetener, lemon zest, and molasses on high speed for 1 minute.
  4. Add eggs one at a time, mixing just until combined.
  5. Add about ⅓ of the flour mixture, mixing on low speed until blended. Add half of applesauce mixture and mix until blended.
  6. Repeat with another ⅓ of flour mixture, mix; then blend in remaining applesauce mixture. Add the last of the flour and mix to combine.
  7. Mix in apples and raisins.
  8. Drop by tablespoonfuls, about 5cm apart, onto prepared baking sheets.
  9. Bake 10 to 12 minutes. Cool on wire racks.
