Instructions

  1. Preheat oven to 190°C.
  2. In the bowl of a food processor, combine flour, baking powder, baking soda, and salt. Process 10 seconds.
  3. Add milk, whole eggs, and Splenda Sweetener. Process 20 seconds more. Transfer batter to a large mixing bowl.
  4. In a heavy ovenproof skillet, melt butter over medium heat. Add apples, sugar, and cinnamon. Cook 5 minutes or until they start to soften.
  5. In a bowl using an electric mixer, whip egg whites until soft peaks form. Gently fold into batter until combined.
  6. Pour batter over apples in skillet. Bake 15–20 minutes or until puffed and golden brown.
  7. Carefully remove pancake onto a serving plate. Cut into 8 wedges.
  8. Garnish with fresh fruit and dust with powdered sugar if desired.
