Instructions

  1. Place white chocolate chips in a bowl.
  2. Melt butter, salt, and lemon zest in a small saucepan. Add heavy cream and Splenda tablets, and heat until almost boiling. Pour the mixture through a fine sieve over white chocolate chips. Add vanilla extract and stir until smooth.
  3. Refrigerate truffle mixture until firm (place them in the freezer if needed).
  4. Scoop teaspoonfuls of mixture and roll into balls. Refrigerate the truffles until completely solid.
