Instructions

  1. Preheat oven to 180°C. Spray a loaf pan with cooking spray.
  2. In a bowl, combine all ingredients. Mix with a wooden spoon until combined.
  3. Pour mixture into the loaf tin.
  4. Bake for 45-60 minutes or until a wooden pick inserted into the center comes out clean. Remove from pan and chill.
  5. Decorate with cream cheese and carrot zest.
  6. Slice and serve.
