Instructions

  1. Preheat oven to 180°C.
  2. In a small, high-powered blender or food processor, and the sweetener and cornstarch, processing on high for 10 seconds. This should turn sweetener into a powdered form.
  3. Measure ½ cup of powdered sweetener and add it to a medium bowl with softened butter. Beat together mixture is light and fluffy. Set extra powdered sweetener aside in a small bowl for later.
  4. Add vanilla to the butter mixture, beating again. Add in flour and beat until fully incorporated. Mix in finely chopped pecans. Mixture may be a bit crumbly.
  5. Roll dough into balls, about 1 ½ tablespoon size, and place on a baking sheet covered in parchment paper, keeping them 8cm apart.
  6. Bake for 10-12 minutes, just until the edges start to get light brown. Remove and let cool for 10 minutes.
  7. Carefully take each cookie while it’s still slightly warm and roll the top in the extra powdered sweetener. Serve and enjoy!
