Splendid Teacake

Ingredients
- 60g canola margarine
- 1/2 cup SPLENDA® Low Calorie Sweetener Granular
- 2 teaspoons vanilla essence
- 1 egg
- 1 cup self-raising flour
- 1/2 cup low fat milk
- 1 teaspoon ground cinnamon
- 1/2 cup sultanas
- 1/2 cup walnuts
Method
Preheat oven to 180°C.
Line base of a 22cm tin with baking paper and lightly grease the sides.
Cream margarine and SPLENDA® Granular until light and fluffy.
Add vanilla essence and egg and beat thoroughly. Stir in flour, milk, sultanas and mix to combine.
Sprinkle cinnamon and nuts into the base of the prepared cake tin and spoon the cake mixture over the top.
Smooth the surface of the cake and bake for 25-30 minutes or until cooked.
Serve warm or cold with yoghurt or whipped low fat cream and a cup of tea.
Notes
This recipe, when compared with a traditional recipe has a 23% reduction in kilojoules, a 44% reduction in carbohydrate and a 92% reduction in sugars.
Tips
An assortment of ingredients can be added to this recipe to change the finished result. eg:
1 cup dried fruit.
1/2 cup desiccated coconut (+1/4 low fat milk).
1/2 cup unsweetened pie apple.
