Chocolate Chip Cookies

Ingredients

  • 175g self raising flour
  • 90g low fat polyunsaturated margarine (31% fat)
  • 12 level tbsp SPLENDA® Low Calorie Sweetener Granular
  • 90g plain choc chips or chunks
  • 1/2 cup steamed apple slices, pureed
  • 1/2 tsp vanilla essence
  • 1 egg yolk

Method

Preheat the oven to 180°C(170°C Fan).

Sift the flour into a bowl. Rub in the margarine until it resembles breadcrumbs

Stir in the SPLENDA® Granular making sure that it is evenly distributed.

Add the choc chips or chunks, apple puree, vanilla essence and egg yolk, cutting through using a knife, then bring together to form a soft dough using your fingers or a spoon.

Cut mixture into 16 even pieces. Lightly flour your hands and roll each piece into a ball

Place on a non stick baking sheet, or on baking paper, then press down to approx 1/2 cm height using the back of a damp fork.

Bake for 12-15 minutes until golden. Cool on the tray.

Notes

This recipe, when compared with a traditional recipe has a 32% reduction in kilojoules, a 28% reduction in carbohydrate and a 68% reduction in sugars.

Tips

Will last longer if refrigerated. Store in an airtight container for 12 days
